Aguachiles


Prep Time: 1 hour 30 min

Cook Time: 1 hour 30 min

Ingredients:

3 lbs uncooked shrimp

4 lbs limes

2 Chile Serrano

2 Jalapenos

2 Cucumber

1 Stick of Celery

1/2 onion

Cilantro

Salt

Directions:

De-vein and clean the uncooked shrimp completely then cut into pieces. Place the shrimp into a large bowl where all your ingredients will go into. Next, cut your limes in half and squeeze the lime juice into the bowl with the shrimp. You want to make sure you have enough lime juice to where the shrimp is completely emerged in the juice. Cover and place in the fridge for an hour for the lime juice can cook the shrimp. While that is setting prep your cucumbers and onion, you would want your cucumber diced and the onions roughly diced. Once the hour is up or the shrimp is completely pink and no longer looks raw, pour the lime juice into a blender. Cut the stems off the Chile Serrano and Jalapenos. (If you don't want it to spicy use lesser Chile Serrano and jalapenos) Add Cilantro and Celery and blend. Pour over your shrimp and add the cucumbers and onions into the bowl and give it a stir. Cover it back up and place it in the fridge for a 1/2 hour. Then Enjoy!!
