Marsala Pork chops with Whipped Potatoes


Marsala mushroom and onion pork chops with whipped potatoes

Feeds up to 4 people

Ingredients :

4 Pork chops

15 oz fresh crimini mushrooms

1/2 sliced onion

teaspoon garlic

6 peeled potatoes cut in fours

1/2 cup Marsala wine

1/2 cup chicken stock

2 tablespoons Olive oil

2 tablespoons butter

teaspoon Fresh thyme

teaspoon pepper

teaspoon salt

1 teaspoon of garlic powder

1/3 cup of all purpose flour

1/2 cup heavy cream

Directions:

On a plate or a shallow bowl add flour, garlic powder, salt and pepper. Place your pork chops in the flour and tap any excess flour off the pork chops.

In a large saute pan over high heat add your oil and butter. Once butter is melted add in your pork chops. Flip pork chops only once when each side is golden brown. Cook thoroughly cook times will be different depending on how thick your pork chops are.

Lower your heat to medium low. Add in your mushrooms and onions and garlic. Move ingredients around so it will not stick to the bottom of the pan. Add in your Marsala wine and chicken stock. Using a wooden spoon scrape the bottom of the pan. Add in your fresh thyme .

Cover and let it cook for 7-8 mins. Once your sauce has thickened into a gravy it will be done.

For the Whipped potatoes during the cooking process of your pork chops add your potatoes in a large pot of boiling water. Cook until tender. You can test this by placing a fork into the potatoes. If it's hard it still needs cooking. If the fork goes in easily they are ready. Drain the potatoes and add butter. Add in your heavy cream slowly and with your hand held mixer mix the potatoes on speed one. Continue adding in the heavy cream if you need to add more heavy cream do so for your consistency. Once you have your consistency adjust mixer to speed two to achieve whipped potatoes Season with pepper and salt and plate! I added the sauce from the pork chops on top of the potatoes. ENJOY!
